Method

  1. Preheat & Prepare Baking Sheet. Preheat your oven to 200°C fan (220°C standard). Line a baking sheet with parchment paper and place it in the oven to warm up – this ensures a better rise for your scones.

  2. Combine Dry Ingredients. In a large bowl, add gluten-free flour, baking powder, and xanthan gum. Chop the cold butter into cubes, add it to the flour, and rub in with your fingers until it resembles breadcrumbs.

  3. Add Flavourings. Stir in two-thirds of the grated cheese, a pinch of salt and pepper, the wholegrain mustard, and the chives if you’re using them.

  4. Form the Dough. Make a well in the centre of the dry mixture. Pour in the milk, mixing with a metal spoon or knife until a dough forms. If it’s slightly sticky, that’s okay. Gently use your hands to bring it together into a ball.

  5. Shape and Cut Scones. Lightly flour your work surface and hands. Place the dough on the floured surface, gently fold it a few times until smooth, and shape into a round about 3.5-4cm thick. Using a 4.5-5cm cutter, cut out scones, reshaping the dough as needed.

  6. Egg Wash and Cheese Topping. Place scones on the prepared baking sheet, brush the tops with beaten egg, and sprinkle with the remaining cheese.

  7. Bake. Bake for , until golden on top and bottom.

  8. Cool & Serve. Remove from oven, transfer to a wire rack, and enjoy warm or at room temperature.

Recipe notes

  • Make sure your butter is cold - it's crucial for achieving that perfect texture
  • Don't twist the cutter when cutting out your scones
  • The hotter the oven, the better the rise!
  • These can also be frozen.
  • Dairy-Free Option: Use dairy-free butter and cheese.

Storage & freezing

Store in an airtight container. You can also freeze them, and if you want them super fresh, just microwave them for 10 seconds before serving!
