Method

Preparation

  1. Wash and dry your potatoes thoroughly. No need to peel them – the skins add extra nutrients!

  2. Slice potatoes as thinly as possible (about 2mm thick) using a sharp knife or mandoline. Try to keep the thickness consistent for even cooking.

  3. Place slices in a bowl of cold water and soak for to remove excess starch.

  4. Drain and pat the slices completely dry using clean tea towels or kitchen paper. This step is crucial for achieving maximum crispiness!

Cooking

  1. Preheat your air fryer to 180°C (160°C fan).

  2. In a large bowl, toss the dried potato slices with olive oil until evenly coated.

  3. Place a single layer of potato slices in your air fryer basket. Don't overlap them!

  4. Cook for , shaking the basket halfway through. Keep an eye on them as they can brown quickly.

  5. Once golden and crispy, remove to a bowl and sprinkle with salt while hot.

  6. Repeat with remaining slices.

  7. Add any additional seasonings while the chips are still warm.

Recipe notes

Cooking times may vary depending on your air fryer model and the thickness of your potato slices. Keep an eye on the chips during the last few minutes of cooking to prevent burning.

Additional Flavour Options:

  • Cracked black pepper
  • Paprika
  • Rosemary
  • Garlic powder

Money-Saving Tips

  • Buy potatoes in bulk when on offer
  • Experiment with different varieties – Maris Piper often works out cheapest
  • Make larger batches and store properly to save time and energy

Storage & freezing

  • Best enjoyed fresh, but can be stored in an airtight container for up to 2 days
  • Keep in a cool, dry place
  • If they lose their crunch, pop them back in the air fryer for 1-2 minutes to crisp up

Questions

Can I make these without an air fryer?

Yes! You can bake them in the oven at 200°C (180°C fan) for 15-20 minutes, turning halfway through.

Why do my chips curl up?

This is completely normal and happens due to moisture evaporation. For flatter chips, try slicing them slightly thicker.

How do I know when they're done?

They should be golden brown and crispy. If they're still pale or flexible, they need more time.
